Description
Indulge in one of the richest, most succulent cuts our ranch has to offer. Our Boneless Plate Short Ribs are a chef’s favorite, celebrated for their intense beefy flavor and incredible marbling. Sourced from the hardworking plate primal, these ribs are masterfully carved by our butchers and ensure peak tenderness.
When cooked low and slow, the abundant connective tissue and collagen melt away, creating a meltingly tender, fall-apart texture that’s perfect for braising, smoking, or slow-cooking. This is the cut that transforms a simple meal into an unforgettable dining experience, embodying the five-generation commitment to quality that defines Adams Ranch.

Beef Grading
Every animal we raise is graded by a USDA inspector to ensure it meets strict quality standards. While this specific cut may not always receive an individual grade due to its nature, Adams Ranch cattle average an impressive 80% USDA Choice or better. This high standard guarantees exceptional marbling and flavor across all our cuts, including our rich and decadent Boneless Plate Short Ribs.
Cooking & Preparation Tips
The Golden Rule: Low & Slow The secret to perfect short ribs is patience. Cooking them at a low temperature for a long period of time breaks down the connective tissues, resulting in maximum tenderness.
Braising (Recommended): Season the ribs generously and sear all sides in a hot, heavy-bottomed pot like a Dutch oven. Remove the ribs, sauté your favorite aromatics (onions, carrots, garlic), then deglaze the pot with red wine or beef broth. Return the ribs to the pot, add enough liquid to submerge them halfway, cover, and cook in a 300°F (150°C) oven for 3-4 hours, or until fork-tender.
Slow Cooker: Sear the ribs as described above and place them in your slow cooker. Add your braising liquid and aromatics, and cook on low for 6-8 hours.
Smoking: Treat them like a brisket! Apply your favorite BBQ rub and smoke at 250°F (120°C) for 5-6 hours, or until they are probe-tender and have a beautiful bark.
Frequently Asked Questions?
What’s the difference between these and other ribs?
Plate short ribs are much meatier and have a richer, more intense beef flavor than back ribs. They come from the lower part of the rib cage and are prized for their marbling.
Will my short ribs arrive fresh or frozen?
To ensure the highest quality and safety for all shipped orders, our beef is flash-frozen at its peak freshness. This process perfectly preserves the flavor and texture from our 21-day aging process.
How many people will this 2-2.5 lb pack feed?
Depending on appetite and side dishes, a 2-2.5 lb pack of boneless short ribs will typically serve 3-4 people.
